1 block diced extra firm tofu

1 cup frozen, shelled edamame

1 frozen bag broccoli

4 oz brown rice noodles

Sweet and savory with a little spice, this high protein buddha bowl is sure to satisfy. An air-fryer makes quick work of this meal, all together ready in 15 minutes!
You can make an easy, vegan sushi bowl by pairing the hoisin tofu with jasmine rice, sliced avocado and cucumber, and sriracha mayo (literally just mayo with as much sriracha as you like)!
The basic tofu recipe here is so versatile and can be used with any sauce from bbq to teriyaki. Here’s a shot from a gochujang dish.
I keep coming back to hoisin, but try it out with your favorite sauce!

Make the edamameSince this is the quickest process that can also safely sit while you're cooking, begin by heating up 1 cup of water in a microwave safe dish for 90 seconds, then add the frozen edamame and allow to sit until thawed. This takes about 3 - 5 minutes. Drain the water and sprinkle with sea salt. |

Prepare the tofuDrain and dice your tofu into small cubes and put them into a large bowl. Sprinkle the garlic and ginger powder over the tofu and toss in the bowl until evenly coated. Then add the cornstarch and toss again. Finally add the panko breadcrumbs and toss to coat. Lightly spray the tray in your air fryer with cooking spray, spread out your tofu evenly, and bake at 400 degrees for 10 minutes, shaking the tray around after 5 minutes. Wipe out the bowl you used to toss the tofu and place the cooked tofu back in with 2 tablespoons of hoisin sauce. Return to air fryer for a final 5 minutes at 400 degrees. When done, toss the tofu in another tablespoon of sauce to prepare for serving. |

Make the broccoli and rice noodlesWhen you put the tofu in the air fryer, start boiling water for your rice noodles and throw your bag of frozen broccoli into the microwave for 4 minutes. Add your noodles to the boiling water and cook about 5 minutes until soft. Drain the noodles and return them to the pot (but not on the heat) and add sesame oil, 1 tablespoon soy sauce, 2 tablespoons hoisin and stir to incorporate. Drain any liquid off the broccoli and toss in the bag with a tablespoon of soy sauce. |
